Pizza is quite possibly my favorite food. I love it. And I love it homemade.
However, considering the fact that I don't have a real oven here in Korea, just a little toaster oven (for which I am immensely grateful!), making homemade pizza is tough.
Enter the French Bread pizza. Although I miss the doughy chewiness of homemade pizza dough, the crunch and the convenience of baguette bread is wonderful. These simple pizzas are perfect for a main dish or for an appetizer and they are completely versatile! Load them up with whatever toppings you desire. My current favorite combination is creamy Alfredo sauce, zesty BBQ chicken and red onions, Mozzarella cheese, and cilantro. NOM!
Let's get to the recipe...
You will need:* French bread / baguette * Your choice of Alfredo sauce - 1 jar is more than enough* Chicken breast, chopped (I used a little under a pound) * 2 small red onions, chopped * 1/2 cup of preferred BBQ sauce* shredded Mozzarella cheese * fresh cilantro, chopped (100 grams) * olive oil* salt* garlic powder* black pepper ---------------------------
Start by sauteing the chopped chicken breast & red onionsin a shallow skillet over medium-high heat.
Season the chicken & onions with salt, garlic powder, and black pepper and cook about 10 minutes, until the onions are tenderand the chicken is fully cooked through and browning around the edges.
Once the chicken & onions mixture has fully cookedturn the heat down to medium-low and add in your 1/2 cup of BBQ sauce. Stir and incorporate the sauce well.
Once the sauce is fully incorporated,continue to cook the chicken mixture for a few more minutesallowing the sauce to thicken a bit. Turn off heat and set aside.
Give your cilantro a rough chop.
The baguette bread that is available to me here in Koreacomes pre-sliced, so I work with the small pieces of bread and just make lots. But, you can feel free to slice your baguette however you wish. ^^
Assemble your slices of bread on a foiled baking sheet (because of my teeny toaster oven, I make small batches). Top each slice with Alfredo sauce.
On top of the sauce, add just a small sprinkling of the Mozzarella cheese. This acts as a sort of glue and helps hold your pizza together.
Then top with some of your BBQ chicken and onion mixture.
And finish off with more cheese, the chopped cilantro, and some black pepper.
Pop these noms into a preheated 350* toaster oven and bake for 15 minutes.
15 minutes later they come out of the oven crunchy on bottom, gooey & cheesy delicious on top.
Serve as a main dish with a side of salador make little ones for an appetizer.

ReplyDeleteI love homemade pizzas, too. :) Primarily ones covered in pepperoni and cheese right now (pregnancy cravings). The French bread thing wouldn't work for me since I'm gluten intolerant and have to use gluten-free dough, so your post reminds me to be grateful for my oven!!
